Arroz Con Pollo or Chicken with Rice. Puerto Rican version. Note: Alcaparras are capers. You can google Puerto Rican Sofrito and find a recipe for it. Each country's recipe for sofrito is a little different. Pegao refers to the "burnt rice" at the bottom of the pot. It's considered a treat by many. I would brown the chicken in a very hot skillet first to give it more color.
arroz con gondules - made these last night for dinner, and my husband and daughter had seconds lol, I guess it's family approved. I used store bought sofrito, but I'm going to try to make it from scratch next time. Also, I made the adobo seasoning from scratching used green gandules. Yum, I'd make this again!
