Mashed Potato Puffs 2 eggs 1/3c sour cream 1c shredded cheese 2T Parmesan 2T chives 3c mashed potatoes Whisk eggs, whisk in sour cream, add cheeses and chives. Season potatoes as desired and mix in. Spoon into buttered muffin tin filling cups. Bake 400 for 25-35 min til pulls away from sides. Cool 5 min turn out and serve.

The trick is to put the pan in a cold oven and then switch it on and begin your timer. Im amazed how many people dont know this. Cook bacon in the oven. Cover cookie sheet with tinfoil first. We do 375 for about 20 min instead of 400 for ten because the lower and slower the more fat renders out. 1 pound Tennessee Pride Sausage Extra Mild, browned 12 large eggs 2 c shredded Cheddar cheese 1/2 t salt 1/4 t pepper Preheat oven to 375*F. Mix all ingredients together. Spray a 12 cup muffin pan and pour egg mixture into each muffin cup evenly. Bake for 30 minutes. Cool for 5 minutes and serve. Makes 12 servings
