Whole30 main dish: Pork Carnitas - My Kitchen Escapades
Pork Carnitas (recipe adapted from Cooks Illustrated) 4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes 1 1/2 tsp salt, 3/4 tsp pepper, 1 tsp ground cumin, 1 onion, peeled and halved, 2 bay leaves, 1 tsp dried oregano, 2 Tb fresh lime juice, 2 C water, 1 medium orange, use juice & spent halves. Need large dutch oven, broiler and foil & about 4hrs. I used crock pot then broiler.
This is THE meat that you want to stuff in your tacos, burritos and salads. Outstanding! My Kitchen Escapades: Pork Carnitas The end result however is out of this world. The meat is completely melt-in-your-mouth, while the caramelization on the outside multiplies that amazing flavors. We have a hard time not eating it all before we get the chance to stick some in a tortilla :) Pork Carnitas (recipe adapted from Cooks Illustrated) 4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes 1 1/2 tsp salt 3/4 tsp pepper 1 tsp ground cumin 1 onion, peeled and halved 2 bay leaves 1 tsp dried oregano 2 Tb fresh lime juice 2 C water 1 medium orange, juiced and keep the spent halves 1. Adjust oven rack to lower middle position and heat to 300 degrees. Combine all the ingredients in a large Dutch oven, including the spent orange halves and juice. Bring the mixture to a simmer over medium-high heat, uncovered. Once it simmers, cover pot and transfer it to the oven. Cook until the meat falls apart when prodded with a fork, about 2 hours. 2. Remove the pot from the oven and turn on the broiler. Use a slotted spoon to remove the meat from the pan and place it on a large foil-lined jelly roll pan. Remove and discard everything from the pot except for the cooking liquid. Place pot over high heat on the stove and boil until thick and syrupy, about 20 minutes. You should have about 1 C of liquid remaining when it is finished. 3. While the liquid is reducing, use two forks to pull each cube of pork into three equal sized pieces. Once the liquid has become a syrup, gently fold in the pieces of pork into the pot. Try not to break up the pork any further. Taste and add additional salt and pepper. 4. Spread the pork back onto the foil lined pan and evenly spread the meat around so there is a single layer of meat. Place the jelly roll pan on the lower middle rack of the oven and broil until the top of the meat is well browned and edges are slightly crisp, about 5 to 8 minutes. Using a wide metal spatula, flip the pieces of meat and broil the other side until well browned and edges are slightly crisp, 5 to 8 minutes. Serve immediately in a tortilla with all your favorite toppings.

Pork Carnitas (originally from Cook's Illustrated)...Highly recomended. I do not care for mexican food much and this seemed very strange to me but this was very good and smelled wonderful cooking. Could be easily adapted to crock pot and could be used many ways. Very happy to find this recipe to use a cheap cut of meat in a new way.

Winter's here, and it's coooold. And when it's cold, I crave warm and warming foods. But sometimes, I want to curl up and eat something that's warm and light (re: not pasta). Enter this salad: The grilling of the romaine, which I do on my grill pan (a miracle tool in the city/winter), gives the lettuce a deeper, heartier flavor. When I was in France, a friend taught me a variation of this vinaigrette recipe which she had learned in her cooking school. I subbed out the white sugar in favor of maple syrup, used meyer lemons, and warmed it up. I also served it with toasty bread that I threw on the grill pan. Perfection. This recipe is: * Warming * Light yet satisfying * Slightly sweet * 5 Ingredients * Less than 15 Minutes! Simply Grilled Romaine with Warm Lemon Vinaigrette ---------- a perfect winter salad | serves four Ingredients: 3 Heads Romaine 8 Slices Baguette 2 Meyer Lemons 2 Tbs Maple Syrup 4 Tbs Olive Oil [Special Equipment: Grill Pan-- I use this Staub pan, but it's a bit pricey and I've found this brand is wonderful] Directions: 1. Break apart your romaine into separate, full leaves. If you're not buying pre-packaged romaine, make sure the lettuce is really, really dry after washing; Otherwise, the leaves will wilt when grilling! 2. Set your grill pan over high heat & leave for a few minutes-- we want to get it hot. Place seperated leaves onto to pan, without oil, and remove when char grill marks appear. Set aside charred pieces, and do this with romaining romaine (pun). 3. As you're grilling, you can simultaneously make the dressing: Juice the three lemons, watching for seeds, into a clear glass bowl, like a pyrex, and add the maple syrup. 4. To warm the dressing, prepare a double boiler-- a pot with boiling water with your pyrex atop it. Slowly drizzle in the oil and keep whisking, until dressing is nice an warm. Play with the proportions! This is just what I like. Note: you could microwave instead of double boiling, if you're pressed for space/ time. Drizzle this on top of the salad when the lettuce is prepared. 5. Place your pieces of baguette on the hot grill pan, and brush with olive oil. Grill to your liking. Toss it all together and serve!
