Grilled Island Chicken

Gluten free • Serves 2-4

Meat

2 Chicken breasts

Produce

1 clove Garlic
1/2 tsp Oregano, dried

Condiments

3 tbsp Lemon juice, freshly squeezed
1 1/2 tbsp Soy sauce

Baking & Spices

1/4 tsp Black pepper, freshly ground
1/4 tsp Salt

    Grilled Island Chicken: 1/3 c. vegetable oil, 3 T. lemon juice, 1 1/2 T. soy sauce, 1 clove minced garlic, 1/2 t. dried oregano, 1/4 t. salt, 1/4 t. black pepper, 2-4 Chicken Breasts. Combine all marinade ingredients. Place chicken & marinade in a ziploc bag. Place in fridge 5-10 hours. Preheat grill to med. heat. Grill chicken for 6-7 min. per side. Tent with foil & let set 5 min. (To bake: Preheat oven 350F. Put chicken in baking dish & pour excess marinade over them. Bake for about 45 min)
