Raw Vegan Lime Tart: Crust: 1 cup dates, 1/3 cup walnuts, cashews & almonds each, 1 tsp vanilla extract -- Blend ingredients well (food processor) until mixture is sticky. Press into tart pan & place in fridge while preparing filling. Cashew Cream: 2 cups raw cashews (soaked for at least 2 hrs), 1/4 cup lime juice, 1/4 cup honey, 2 tsp vanilla, pinch of salt, 1/4 cup water (adjust to desired consistency) -- Blend ingredients in a blender until smooth. Pour over crust & garnish with lime wedges.
Raw strawberry-chia jam SUPER EASY. Blend up some strawberries and honey (or your chosen sweetener) until it's liquidy, and then stir in chia seeds. I didn't like the ratio in the recipe (too liquidy for me) so I just keep adding until it was set up nice and thick.
