Gluten Free Chocolate Chip Muffins~ 2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour 1/2 cup organic pure cane sugar 1 tablespoon baking powder 1/2 teaspoon salt 1 egg 3/4 cup plus 2 tablespoons milk 1/3 cup vegetable oil 1/2 teaspoon pure vanilla extract 1/3 cup chocolate chips ( I used mini's) Instructions: Preheat oven to 400° F. Mix wet, Mix dry, combine. Fold in chocolate chips. Bake at 18-20 min greased muffin tin.
Snickerdoodles Gluten Free ~ 2¾ cups Cup 4 Cup gluten free all purpose flour 2 teaspoons baking powder ½ teaspoon coarse salt 1 cup (2 sticks) unsalted butter, softened 1½ cups plus 3 tablespoons sugar 2 large eggs 3 teaspoons ground cinnamon ~ 350 preheat. Mix dry. Mix butter and 1 1/2 cup sugar then eggs. Slowly add in 1/2 cup of dry at a time. Roll in 1 tsp cinnamon and 3 TBS sugar. Bake 12-15 min
