Garlic Spaghetti Squash w Herbs - 1 M spaghetti squash, halved/seeded, coconut oil, sea salt, 2 cloves garlic, 1 t apple cider vinegar, ¼ c cut fresh parsley, 2 T cut fresh basil, sage, 1/4 c nutritional yeast, ½ c pine nuts toasted, pepper. 375F Rub squash w oil/salt. Cut side down on rimmed baking sheet & roast 25 min. cool 10 min, dry w paper towel. In skillet, heat 2½ T oil M. Add garlic 1½ min. Add squash, vinegar, herbs, & ¼ t salt. Cook 2 min. Remove, add yeast, pine nuts.
Paleo Cardamom cupcake 1/2 c coconut flour 5 eggs, room temperature (that's important) 1 T ground flax 6 T raw honey, stevia 6 T coconut oil 2 T coconut milk, room temp 1 t vanilla 1/2 t cardamom 1/4 t baking soda 1/2 t apple cider vinegar 350 degrees and prepare a muffin tin with 8 liners. Combine the coconut flour and eggs. Add the remaining. Divide evenly between the muffin tins. Bake until golden and a toothpick comes out clean, about 20 min. Cool completely and frost. Makes 8 cupcakes.
