Greek Yogurt Banana Bread. Could easily substitute sucanat or honey for the brown sugar and it'd be about perfect!

Greek Yogurt Banana Bread - i've been wanting to make this forever..even though its the dead of winter, i found the strawberries and followed through. I did one thing differently: I didn't have a loaf pan so I made cupcakes. Anyway, this is a great recipe! Its great for a quick snack or breakfast on the go. Also it makes me feel healthy with the strawberries and Greek yogurt.

Greek Yogurt Strawberry Banana Bread | Nosh and Nourish - I modified this recipe. I used all purpose flour and regular (not Greek) fat free vanilla yogurt and only 1 banana. I stirred in 1/4 teaspoon maple flavoring and 1 Tablespoon peanutbutter (softened in microwave) with the strawberries. And I used a full helping cup of strawberries. It was dense. The peanut butter was more of an aftertaste. I liked it toasted. I might keep playing with the recipe... -cp
