I used this recipe "Greek Ribs" to marinate lamb ribs 24 hours. Used oak charcoal lumps and slow cooked in a closed pit to give them a smokey flavor and finished them off Sweet Baby Rays' Honey Chipotle BBQ sauce to caramelize the ribs. SAUSAGE STUFFED SPAGHETTI SQUASH Dinner, It’s Cooking in the Squash Recipe from The Complete Low-Carb Cookbook by George Stella Prep Time 20 min / Cook Time 55 min / Serves 6 SHOPPING LIST 1 medium spaghetti squash (may use 2 small) 1 pound ground Italian sausage, without casings 1⁄2 cup diced red onion 2 teaspoons minced garlic 1 green bell pepper, diced 1 cup sliced button mushrooms 1 (15-ounce) can tomato sauce 1⁄2 cup black olives, chopped 1 tablespoon Italian seasoning 2 cups mozzarella cheese 1. Preheat the oven to 350°. Carefully slice the spaghetti squash in half lengthwise. Scoop the seeds from the squash, and place the cleaned squash halves in a baking dish. 2. Place the Italian sausage, onion, and garlic in a large skillet over medium-high heat, and sauté until sausage is browned and crumbled. 3. Add the bell pepper and mushrooms to the skillet, and sauté an additional 3 minutes before draining any excess water or grease. 4. Stir in tomato sauce, olives, and Italian seasoning, and bring up to a simmer for 5 minutes. 5. Sprinkle 1⁄2 of the mozzarella cheese evenly over the inside of the cleaned spaghetti squash halves, and then top with an equal amount of the cooked sausage mixture. 6. Top the stuffed halves with the remaining mozzarella cheese, and bake 35–40 minutes. Let cool 5 minutes before serving. HELPFUL TIPS If you poke some holes in the spaghetti squash and microwave for just 1 minute, it will start to soften the squash to make it easier to cut in half.
