Great Mexican side dish! 1 cup uncooked long grain white rice 1 (14 ounce) can chicken broth 1 cup sour cream 1 (4 ounce) can diced green chile peppers 2 cups shredded pepper Jack cheese, divided 1 1/2 cups frozen corn 1/4 cup finely chopped fresh cilantro salt and ground black pepper to taste by maggymaes
Garlic Roasted Zucchini: 2 zucchini, olive oil, salt, pepper, rosemary, garlic. Cut zucchini into pieces and combine in zip lock bag with garlic, enough olive oil to coat, salt, pepper and rosemary and squish to mix. Put on cookie sheet and bake at 375 for 20-25 min or until zucchini is soft and golden
French Onion Soup Casserole - Slice thinly three large sweet onions. Sautee in 2 T olive oil until lightly browned. Layer in sprayed 2 qt casserole pan with 1 c shredded Swiss cheese. In bowl whisk to blend 1 can cream of chicken soup, 2/3 c milk, 1 tsp soy sauce, fresh ground pepper. Pour over onions. Top with 8 slices buttered French bread. Bake 350 for 15 min uncovered to toast bread. Remove and push bread slices under soup. Top with 1 c shredded Swiss and bake another 15 min.
