Crispy Rolled Shrimp Tacos. 5-28-13 tried to make these as taquitos, but the corn tortillas fell apart and were not big enough. Got the standard ones at HEB. So I fried the tortillas to make chalupas. Added cheese, guac, sour cream, and fresh lime squeezed on top. AMAZING. Will do again as chalupas or as filling for "regular" corn tortilla tacos.

I didn't have the red peppers so I made it without them, this will definitely be hitting the regular rotation...most of the ingredients can be found in my pantry anyway, so stock up on some of the staples of this recipe and keep it in your back pocket when "there's nothing to make" But whatever you do, you have to try this soup!!!
