Grilled Veggie Panzanella!  My favorite summer recipe so far....

Grilled Vegetable Panzanella with Zucchini, Squash, Tomatoes, Shallots, Orange Pepper and Crimini Mushrooms {Via Simply Scratch}

Vegetable Tian: Saute 1 med diced onion w/ 1 tsp minced garlic in olive oil until softened.  Spread in bottom of 8X8 baking dish.  Place thinly sliced veggies (1 med zucchini, 1 med yellow squash, 1 large potato) in dish vertically, alternating veggies.  Sprinkle generously with salt, pepper, and thyme.  Cover w/ foil, bake 30 mins @ preheated 400, remove foil, top w/ 1 cup shredded Italian cheese and bake another 15 minutes or until cheese is golden brown.
