    Another quick breakfast idea I employ is Pumpkin Pie Soup. Combine pureed or canned pumpkin and some coconut milk and toss it in the microwave for 45 60 seconds. Once warm, add nutmeg, cinnamon and whey protein. Consistency should not be soupy but thick. If you already open the pumpkin and coconut and have it in containers, you can literally make this breakfast or snack in less than 2 minutes.

I have a variation of this in the crock pot today. Subbed some already cooked roast beef for the stew beef, thyme for the italian seasoning, no peas, less onions and tomatoes, more broth, and added a bit of red wine and worchestire sauce.

Paleo Pumpkin Bread. I had some leftover pumpkin, so I gave this a try. It made two mini loaves. Turned out tasty... a little dense though. I was hoping it would rise a little more. May need to adjust the baking soda (and possibly add some baking powder too). Altitude does crazy things to baked goods.
