Grow The Best Organic Lettuce - diversity within the beds (plant w/herbs, garlic, onions, etc.), also plant with a trap crop (radishes) that pests will attack those leaves instead (bonus - you still get radishes!)

Cut-and-Come-Again Lettuce - varieties of lettuce you can cut, and that will grow back (like grass)
