BLACKLIGHT JELLO SHOTS - Bet you never saw jello shots like these. These blacklight glowing cups of wonder are fun to look at. They're a little bitter because of the quinine in the tonic water, but that's what makes them glow! You could easily swap Gin for the the Vodka, and have something close to a fruity Gin & Tonic. You must have a blacklight for these to glow! It's pretty awesome looking though if you do.

To make a Mojito like a Captain, muddle half a lime cut into wedges, 6 fresh mint leaves, and 0.5 oz simple syrup in a shaker. Add 1.5 oz Captain Morgan White Rum and fill with ice. Shake well, pour into collins glass, and top with club soda. Garnish with mint sprig and enjoy a Mojito at your next brunch this spring.
