I used a third of the nutmeg on this recipe and kept the shortening. I would increase the raise time on these too. The first hour is good but once cut, I would let raise at least another hour. They tasted good and were light, but like all donuts they were much denser on day two. I also preferred a regular glaze on them rather than the maple frosting.
