Asian Green Bean Salad - Category Winner: Sides and Salads, Cooking Light Ultimate Reader Recipes Contest "I created this make-ahead dish to have after a long day at work. Snow peas can be substituted for the beans. Garnish with a cilantro sprig." Linda Dalton, Stoughton, MA. Print this recipe at AmericanFamily.com.
Crunchy Asian salad with peanut dressing. Spinach or other greens, carrot, red bell pepper, red onion, sugar snap peas, and cucumber tossed in homemade peanut dressing and topped with toasted peanuts and sesame seeds. The dressing is both sweet and sour, and very creamy! Healthy, vegetarian, and gluten free.
Asian Cabbage Mango Slaw - Loved this! I used a whole bag of coleslaw (not the stuff with the dressing - just the cabbage and carrots) and doubled the dressing portion of the recipe. Really loved this! Darren thought it could have used a little sweet though (like sugar or agave). Definitely will make it again, a great summer side dish.
