Lightly oil the 12 molds in a regular-size muffin pan. Slice all the potatoes thinly with a Mandoline or a sharp knife. Wash the potatoes, drain well and pat dry with a paper towel. In a large bowl, toss the potatoes with olive oil, rosemary, lemon juice and season with salt and pepper. Stack the potatoes and lay them sideway in a muffin pan and bake for about 25 to 30 minutes or until the potatoes turn crispy on the outside and the flesh is soft. Transfer the muffin pan to racks to cool for 2 to 3 minutes before carefully removing the potatoes. Serve warm.

I also didn't have any garlic, so I just sprinkled on garlic powder. I threw together my own seasoning blend in exchange for the Italian seasoning. So many possibilities with this simple side dish!

Chicken Parmesan Meatloaf Muffins *** INGREDIENTS *** Cooking spray, for coating the muffin pan. 1/3 cup plus. 1/2 cup panko. 1/3 cup plus. 1/2 cup finely grated Parmesan cheese (about 2 ounces). 1 tablespoon olive oil. 1 large egg. 2 pounds ground dark-meat chicken. 1/2 cup minced yellow onion (from about 1/2 medium onion). 1/4 cup finely chopped fresh basil leaves. 2 medium garlic cloves, minced. 1 tablespoon kosher salt. 1/2 teaspoon dried oregano. 1/4 teaspoon freshly ground black pepper. 6 ounces whole-milk mozzarella cheese, medium dice 3 cups Basic Tomato Sauce or marinara sauce *** INSTRUCTIONS *** Heat the oven to 400°F and arrange a rack in the middle. Line a baking sheet with aluminum foil. Place a 12-well muffin pan on the baking sheet and coat the wells and the top of the pan with cooking spray (alternatively you can use olive oil to coat the pan); set aside. Using your fingers, combine 1/3 cup of the panko, 1/3 cup of the Parmesan, and the measured olive oil in a small bowl until evenly moistened; set aside. Place the egg in a large bowl and beat it with a fork to break it up. Add the remaining 1/2 cup panko and 1/2 cup Parmesan, the chicken, onion, basil, garlic, salt, oregano, and pepper. This is one of those dishes that exceeded my expectations, you can use red potatoes or new potatoes, but I really love the buttery texture of yukon gold. The only thing I urge to ensure the potatoes are cooked and tender is that you slice the potatoes 1/8 inch thick, a mandoline really makes this easy. Any thicker and you'll have to adjust the baking time. This is a must for Thanksgiving! Spray an 11 x 7-inch baking dish with cooking spray. In a large bowl, combine potatoes, butter, salt, garlic powder and fresh cracked pepper. Arrange half of the potato slices in the baking dish; top with 1/4 cup cheese. Add the remaining potatoes. In a small saucepan, bring milk, thyme, bay leaf and nutmeg to a boil; pour over potatoes. Top with remaining cheese and bake uncovered, for 45 - 50 minutes, or until potatoes are tender
