Protein bar: it's really hard to find the perfect protein bar. Most have way too many carbs or contain sugar alcohol which for some has a very unpleasant side effect. These use chocolate protein powder and natural peanut butter and top out at 3.88 net carbs and a whopping 23.54 grams of protein! Makes 8 bars
Easy granola bars. 1½ cups old fashioned rolled oats 1 cup chopped walnuts ½ cup sliced almonds ⅔ cup shredded unsweetened coconut (available at Whole Foods or natural food markets) ½ cup honey 3 tablespoons light brown sugar 2 tablespoons unsalted butter 1½ teaspoons vanilla extract ¼ teaspoon salt 1 cup crisp rice cereal, such as Rice Krispies
Do-It-Yourself Protein Bars - 2 Cups Peanut Butter. 1 3/4 Cups honey. 2 1/4 Cups Protein Powder. 3 Cups dried oatmeal or granola. In a microwave safe bowl combine peanut butter and honey for 70 -90 seconds. Add protein powder and oatmeal. Mix all of this (it will be thick). Press it into 9X13 inch pan. Put it in the refrigerator to cool.
