Chicken Stroganoff - I'd use a little white wine to deglaze and some heavy cream for more sauce; pinch of nutmeg, tarragon and 1/4C shallots instead of onion.

Going to try this but modified. I don't have Herbs De Provence so I'm not sure what I will rub it with. I don't have red peppers so I'll layer the bottom with onion and carrots and stuff the bird with apples, carrots and onion. We'll see how it tastes.
