Broccoli and Italian Sausage Egg Muffins ~Preheat oven to 375 Brown 1 lb Italian Sausage. Remove from heat and stir in 1 C broccoli. Whisk 8 lg eggs, 1/4 C milk, 1/2 tbsp oil and 1/2 tsp baking powder. Season with salt and pepper. Spray cupcake pan. Spoon sausage and broccoli mixture evenly into each cup. Ladle egg mix over sausage. Sprinkle with Parmesan cheese. Bake for 15-20 minutes. Used this recipe as a base...substituted spinach for broccoli and added green onions. I used link sausage and chopped them up, I put one sausage in each muffin cup and then added spinach and green onions. Next time I'm going to do a strip of bacon around the muffin cup before I fill it. This should help with sticking.
Eggy Cups! cut circle out of slice of bread, using cookie cutter or drinking glass; wrap piece of bacon around outside of bread, place in greased muffin tin. sprinkle grated cheese on bread, top with one egg. bake in oven till egg is the way you want it and bacon is crisp.
