Apple Muffins

Vegetarian • Makes 18

Produce

3 cups Apples

Refrigerated

2 Eggs

Baking & Spices

1 tsp Baking soda
1 Brown sugar
1 tsp Cinnamon
3 cups Flour
1 tsp Salt
2 cups Sugar
1 tbsp Vanilla

1 cup Oil

    Apple Muffins. I use a quick apple puree (with a little butter and orange juice) in place of the oil, 2.5 cups flour and 1/2 cup oatmeal run through the food processor, a little less sugar than called for, and a couple handfuls of fresh walnuts run through the processor. And I skipped the brown sugar on top. Breakfast for the next week and a half. Yum!

    Easy moist apple muffins. Just made these, they are pretty tasty! I adjusted the topping a little. I did 1 cup brown sugar, 1/2 cup flour, 2 Tbsp softened butter, 1/2 tsp cinnamon, and used a fork to squish it all together. I also added some pear, or apple butter to make the mixture less dry. I made 12 muffins, and 20 mini muffins with this mix.

    Apple Muffins | The Girl Who Ate Everything Need: 2 C sugar (use 1 1/2 C for a less sweet muffin); 2 eggs; 1 C oil (or sub unsweetened applesauce); 1 Tbsp vanilla; 3 C flour (AP or 1/2 wheat); 1 tsp salt; 1 tsp baking soda; 1+ tsp cinnamon; 3 C peeled, cored, diced apples (around 3 apples); Brown sugar for topping (around 1/2 cup).

Pumpkin Waffles | The Girl Who Ate Everything. Update: made these 10/13/2012 and they were amazing! I halved the recipe and it made 6 medium sized waffles. Perfect for a family of 3! :)

Apple Coleslaw Mix the dressing and honey in large bowl. Add the coleslaw and apples and mix together. The mixture might seem dry but it will be plenty once the mixture has chilled in the fridge since the cabbage will release some liquid. Salt and pepper to taste. Refrigerate at least one hour to let the flavors blend.

Apple Streusel Coffee Cake. Smelled and tasted SO good. Left out the pecans. Used buttermilk instead of normal milk.

Apple Pie Caramel Apples. I tried these and although I made a huge mess out of my kitchen in the process, they were delicious!! They tasted like the ones from Rocky Mountain Chocolate Factory. But in the recipe she said to use white chocolate...WRONG...I used white almond bark. You could also probably use the vanilla candy melts they sell in the cake decorating section of A.C.Moore, etc.
