FRIED RICE 3 cups cooked white rice, 3 tbs sesame oil, 1 cup frozen peas and carrots (thawed), 1 small onion, chopped, 1tsp minced garlic, 2 eggs, slightly beaten, 1/4 cup soy sauce. Heat oil in a large skillet or wok on high. Add peas carrots, onion and garlic. Stir fry til tender. Push mixture to side. Pour eggs on the other side and stir fry until scrambled on low. Add the rice and soy sauce and blend all together well. Stir fry until thoroughly heated. Try adding some green onion.
2 pounds red potatoes 6 eggs 1 pound bacon 2 scallions, finely chopped 1 stalk celery, finely chopped 1 cup shredded cheddar cheese 1 cup Miracle Whip 1 cup sour cream salt and pepper to taste Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving.
