    Chia Seed Energy Bars - (nut & dairy free) / 6 large Medjool dates - 1/2 c Chia Seeds - 2 Tbsp Coconut Oil - Optional: 1/2 tsp natural vanilla extract, pinch of cinnamon powder, 2 tsp Dark Chocolate chips, shredded coconut, dried fruit / Remove the pits from the dates & pulse the dates in a food processor forms a paste. Mix the date paste with the chia seeds & coconut oil. It will form a thick dough. Roll this dough into balls/press into bottom of a glass baking dish & cut into squares.

Ch-ch-ch-chia! As a lover of all things sweet & chewy, I had to try this recipe. I only used 1/4 cup nuts and probably could have used less water. The end result had a crunchy cereal-like quality on the inside, with a slightly sweet, chewy layer on the outside. I would definitely make this again.
