Vegan Cranberry-Orange-Nut Cookies -- My family and friends are wild for these! My adjustments: used 1 cup all-purpose flour and 1/2 cup whole wheat; added 1.5 teaspoons Ener-G egg replacer to the dry ingredients; replaced canola oil with coconut oil; reduced sugar to 2/3 cups; used 3/4 c. Craisins and 3/4 c. chopped pecans; refrigerated overnight. Instead of flattening so much, the cookies baked into nice thick domes. They are DELICIOUS with coffee!
