*Made: Eggplant and Mozzarella Melt - Martha Stewart Recipes. So yummy & super easy! I used garlic bread which made it all the better! And I used any extra sauce as a dipping sauce

Baked Eggplant: Peel and slice eggplant into thumb-thick slices, salt on both sides and let sit 1hr. Wash slices(squeezing gently). Dip slices in egg and panko(w/ salt & pepper). Bake at 400F until soft on inside & crispy(browned) on outside(1hr). Sprinkle slices with fresh grated parmeson. Bake further until cheese melts.

Emeril's Kicked-Up Tuna Melts Recipe. Made these last night and they were so tasty! Quick and cheap meal option. I made mine w/ white onion and smoked provolone. Not spicy (as I assume any Emeril's recipe would be). Not your average tuna melt!

Hummus melts- whole wheat English muffin topped with hummus, sauteed spinach and mozzarella cheese. So easy. I used Parmesan cheese instead of mozzarella, and used avocado hummus as well.

I especially love this flatbread because thanks to the cooking time, all the vegetables can be tossed on raw and will soften/cook while the cheese is melting. This recipe is also great for adding any and all herbs you might have growing in your garden!
