For the Salad) 1½ c. chopped strawberries 1½ c. broccoli, cut with most of the stems removed ¼ c. salted cashews, chopped 2 TB (or more) toasted coconut (For the Dressing) 2 TB. greek yogurt, plain 1 TB. balsamic vinegar 2 TB. honey sprinkle of cinnamon If not eating immediately, add coconut just before serving.
Creamy Broccoli Salad - A perfect salad for lunch, or to bring to potlucks. Add bacon bits, if desired!
1 head broccoli, stems removed and florets cut into pieces 4 slices cooked bacon, crumbled 1/2 cup red onion, chopped 1/2 cup raisins 3/4 cup mayonnaise 2 tbsp white vinegar 1 1/2 tbsp honey 1/4 cup roasted no salt added sunflower seed kernels sea salt and freshly ground black pepper to taste Preparation: In a small bowl combine mayo, vinegar, honey, salt and pepper. Mix well and set aside. In a large bowl combine broccoli, bacon, onion and raisins. Gently stir in the mayo dressing. Sprinkle with sunflower seeds and serve immediately.
The Stetson Chopped #1: Chop fairly small: 2 cups Arugula; 2 cups roma tomatoes; 8 oz Asiago cheese. 2 c. roasted sweet corn (30 min at 300°F); 2 c. Brown Rice or Couscous; 8 oz smoked salmon lox (or chicken breast ); 1 c. Pepitas (pumpkin seeds), roasted and salted; 1 c. Dried currant. Pour dressing over top and mix when ready to serve.
