Crockpot Pesto Ranch Chicken - four ingredients - chicken, ranch dip mix, pesto, and chicken broth. 8 boneless skinless chicken thighs 6 ounce jar of pesto 1 package Ranch Dressing Seasoning Mix 1/2 cup chicken broth Directions 1.Turn crock pot to high setting. Place chicken thighs, pesto, ranch dressing and chicken broth into crock pot. Stir gently to combine all seasonings. Close with lid and cook on high for 3-4 hours or on low for 6-8 hours.

Baked Artichoke Chicken- won best recipe "The Chew" & for good reason. This was 10*, fast, easy and delicious! I ended up not having red wine vinegar, so I used the white wine & olive oil. I also did not use tarragon, as I don't like it, but rather fresh thyme sprinkled on the dish. I also used Chicken tenders (all I had at the time) and it was great and took less than 30 minutes to cook. I am sure bone in breasts would offer additional flavor - but no matter - you cannot beat this taste!
Baked Artichoke Chicken (4 lbs. chicken breasts, 1 C artichoke hearts, halved (canned is fine), 1 med onion, cut into pieces same size as the artichokes, 1 lb white button mushrooms (1/2 or 1/4ed), 2 T Dijon mustard, 2-3 cloves garlic, minced, 1/4 C olive oil, 1/4 C red wine vinegar, 1/4 C red or white wine (or sub in chicken stock), 1/4 t dried basil, dried thyme and dried tarragon, 1 bay leaf, and kosher salt & pepper to taste)

Mexican Breakfast Casserole. *Ingredients: 3 oz. uncooked chorizo (spicy Mexican sausage) 6oz. ground turkey 1 medium onion, chopped 1/2 red bell pepper, chopped 1/2 green bell pepper, chopped 1 tbsp. minced garlic 1 cup baby spinach 4 slices whole wheat bread, cubed 4 eggs 2/3 cup skim milk 1/2 tsp. ground mustard 1/2 tsp. salt Freshly ground black pepper, to taste 1/2 cup grated reduced-fat swiss cheese 1/2 cup grated reduced-fat extra sharp cheddar cheese 1/2 cup grated reduced-fat jalapeno cheddar cheese Instructions: Preheat oven to 350 degrees. Spray a 9" by 13" baking pan with nonstick cooking spray. Place the bread cubes in a single layer in the bottom of the pan. Whisk the eggs, milk, ground mustard, salt, and black pepper together, set aside. In a skillet, brown the chorizo and ground turkey until cooked through then add the onion and bell peppers and saute until tender. Add garlic and saute a minute more and then add spinach and cook just until spinach wilts. Layer half of the meat and veggie mixture over the bread, then half of the egg mixture, then half of the cheeses. Repeat the layers once more until all ingredients have been used. Cover and bake at 350 degrees for 35-45 minutes or until cooked through, uncovering for the last 5-10 minutes so the cheese will brown slightly on top. Enjoy!
