Baked Southwestern Egg Rolls -- Made on 12/22/2011. I added about a cup of shredded chicken and this recipe made 45 egg rolls. They cooked up very crispy. I only cooked a couple and froze the rest. These are going to be great to pop in the oven for a snack or to take somewhere. Will use spring rolls instead.

A party where we all gathered to watch a football game that was most definitely not super (for a Colts fan, anyway). While the game itself was quite a disappointment, these egg rolls were anything but. This version is vegetarian with black beans, corn, spinach, and cheese. I’m sure they would be wonderful with some cooked chicken mixed in as well, but I like them as they are. They were gobbled up in almost no time, and I probably should have made a double batch. I absolutely love them, especially when paired with my beloved salsa. I’m sure we’ll be having them frequently – you know, to help drown our sorrows until next football season. Baked Southwestern Egg Rolls Printer-Friendly Version Ingredients: 2 cups frozen corn, thawed 1 (15 oz.) can black beans, rinsed and drained 1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry 2 cups shredded Mexican cheese blend 1 (4 oz.) can diced green chiles, drained 4 green onions, chopped 1 tsp. ground cumin ½ tsp. chili powder 1 tsp. salt ½ tsp. pepper ¼ tsp. cayenne pepper 1 package egg roll wrappers (about 24 total) Directions: In a large bowl, combine everything but the egg roll wrappers. Mix well to blend. Lay an egg roll wrapper out on a work surface so that one of the corners is pointing toward you and place ¼ cup of the filling in the center. Fold the tip closest to you up over the filling, roll a bit, then take the points pointing outward and fold them in toward the center. Continue rolling into an egg roll shape until a small part of the remaining point is still free. Dip a finger in water or beaten egg and lightly brush on the edges of the free corner. Finish rolling and press to seal closed. Repeat with the remaining wrappers and filling. Preheat the oven to 425˚ F. Lightly oil a baking sheet with cooking spray. Place the sealed egg rolls on the baking sheet seam side down and spray the tops of the egg rolls with cooking spray. Bake for about 15 minutes, or until lightly brown, turning halfway through baking. Serve warm with salsa. Source: adapted from Ezra Pound Cake

Cucumber Feta Rolls Yield: approximately 20 rolls Prep Time: 15 - 20 minutes Total Time: 15 - 20 minutes Print Save Recipe Ingredients: 2 cucumbers 6 ounces crumbled feta 3 tablespoons Greek yogurt 2 1/2 - 3 1/2 tablespoons finely diced sundried tomatoes or red bell pepper 8 - 12 pitted kalamata olives, roughly chopped 1 tablespoon roughly chopped dill or oregano 2 teaspoons lemon juice pinch of pepper, or to taste Directions: Thinly slice the cucumbers longways on a mandoline at a 2mm thick setting. Alternatively, you can use a vegetable peeler if you do not have a mandoline. Lay the cucumbers on top of a paper towel lined cutting board while you prepare the filling. Add the feta and yogurt to a medium bowl. Mash to combine using a fork. Add the bell pepper or sun dried tomatoes, olives, dill, lemon, and pepper to the bowl. Stir well to combine. In a bowl, mash the feta using a fork. Place 1 - 2 teaspoons of mixture at one end of a cucumber strip and roll up. Secure with a toothpick. Repeat with remaining strips. Buffalo Chickpea Dip. It is SO good! If you can't have nuts or don't happen to have cashews around, use an extra cup (or can) of white beans instead. If you'd rather not use a cheese substitute like the Daiya that's called for, one commenter says it tastes great without it. I cut the Frank's Red Hot (hot sauce) in half, and put the bottle on the table for those who like some extra heat. We eat it with veggies and tortilla chips for dipping. I'll bet it would work well in a slow-cooker, too.

lasagna cups (good for parties) I don’t know about your family, but in my family when we eat lasagna, we all fight over the corners of the pan because of the crispy and chewy texture. With these cupcakes, every single one has all the yummy qualities of those corner pieces. Just cut some wonton wrappers into circles using a glass as an outline. Ingredients 1 cup marinara sauce 3/4 pound ground beef 12 wonton wrappers 8 ounces shredded mozzarella 3 ounces Parmesan cheese 4 ounces Ricotta cheese (optional) basil for garnish Directions 1Preheat oven to 375 degrees. Spray muffin tin with cooking spray. 2Brown beef and season with salt and pepper. Drain.3Cut wonton wrappers into circle shapes using a biscuit cutter or using the top of a drinking glass. You can cut several at a time.4Reserve 6 tablespoons Parmesan cheese and 6 tablespoon mozzarella for the top of you cupcakes. Start layering your lasagna cupcakes. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Sprinkle a little Parmesan cheese, Ricotta cheese, and mozzarella cheese. Top with a little meat and marinara sauce. Use around 1-2 teaspoons of all the ingredients depending on your personal preference. 5Repeat layers ending with marinara sauce. Top with reserved Parmesan and mozzarella cheese.6Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove use a knife to loosen the edges then pop each lasagna out.7Garnish with basil and serve
