Baja-Style Chicken Bowl cup frozen corn, cup black beans, 2 ounces diced cooked chicken season with salt and pepper to taste. Spoon chicken mixture over cup cooked brown rice and top with cup salsa and 2 tablespoons shredded Monterey Jack.
Tested and very easy peasy and yummy! (and healthy!) 15 minute black bean soup- This was a huge hit. A little on the spicy side, but the kids gobbled it right up and asked me to make it again. Bonus- it is a 20 minute or less prep!
