Roasted Corn Chowder. Delicious soup. Only weird thing about this recipe is that it has you render the fat out of bacon, then drain all but a tiny bit of it, then add olive oil to the pan to sauté the veggies in. That seemed dumb to me, and since the only lipid in this recipe is that bit of bacon fat, I was happy to hang on to and cook with it. End result was a bit of bacon flavor all throughout, which equals really good soup.
