Spicy Thai Noodles. I used rice noodles as I am wont to do, and I used half the package only, replacing the other half with a bag of shredded cabbage and carrot (aka coleslaw mix, but just the vegs). I left in 2 tsp red pepper flakes with the oil and sauteed the veggies down before adding the noodles. Seemed like too much oil to me so I just used sesame oil 'till it felt right. Same with the soy sauce and honey, I added equal parts until it tasted good to me. It was easy peasy. 3.5 stars.

Spicy Thai Noodles 1 tablespoons crushed red pepper (very spicy) ¼ cup vegetable oil ½ cup sesame oil 6 tablespoons honey 6 tbsp soy sauce Green onions, cilantro, peanuts, and toasted sesame seeds. Can add grated carrots. Will probably omit the vegetable oil and add peanut butter and touch of vinegar.

Roasted Balsamic Green Beans with Mushrooms & Parmesan ~ 8 oz crimini or other mushrooms, sliced; 1 lb fresh green beans, preferably thin French style beans; 1½ TBsp olive oil; 1 TBsp balsamic vinegar; salt & pepper; 2 TBsp finely grated parmesan cheese ~ Marinate beans & mushrooms in the vinegar & oil in a zippered bag. Spread out on cookie sheet and roast 20-30 minutes at 400°. Sprinkle with salt & pepper to taste & Parmesan.

coconut crack bars This was the base (and I used the 1/4 c water with 1 tbsp truvia dissolved in it). Then I topped them with some skinny chocolate (made 1/2 c coconut oil, 1/8 c cocoa powder, 1 tbsp ground truvia, a splash of heavy cream, dash vanilla, sprinkle of salt, and then some chopped almonds). Poured chocolate mixture on top of coconut bars and stuck in the freezer to set. They were very good if u like coconut!

You can add olive oil to taste if you prefer! Yield: 1.5 c

Directions: Add garlic clove to processor and process until finely chopped. Now add in the rest of the ingredients to taste and process until smooth, scraping down the bowl as necessary.
