    Grilled Chicken with Lemon Basil Pasta

    4 Chicken breasts, whole


    20 Basil, whole Leaves
    3 Lemons, whole

    Pasta & Grains

    1 lb Penne pasta

    Baking & Spices

    1 Salt and freshly ground black pepper


    1/2 stick Butter
    1/4 cup Half-and-half
    3/4 cups Heavy cream
    1 1/2 cup Parmesan cheese, Grated

Set pasta aside in a colander. In the same pot, melt butter over medium heat. Squeeze in the juice of 3 to 4 lemons. Whisk together. Pour in cream and half-and-heat. Whisk until hot. Dump in cheese and whisk until melted. Add salt and pepper. Check consistency, adding some of the hot pasta water to loosen the sauce if needed. Pour pasta and sauce into a large serving bowl. Sprinkle remaining basil all over the top, then add sliced chicken breasts. Serve immediately!

    4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour. Enjoy!

    Incredible Baked Meatballs. 1lb hamburger, 2 eggs, beaten with 1/2 cup milk, 1/2 cup grated Parmesan , 1 cup panko or bread crumbs, 1 small onion, minced, 2 cloves garlic, minced, 1/2 teaspoon oregano, 1 teaspoon salt, freshly ground pepper to taste, 1/4 cup minced fresh basil Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.

    Honey Mustard Grilled Chicken

    PIZZA BALLS! 3 cans Pillsbury Buttermilk Biscuits (10 per can), 56 pepperoni slices, block of Colby cheese, 1 beaten egg, Parmesan, Italian seasoning, Garlic powder, 1 jar pizza sauce…Cut the block of cheese into 28 squares. Flatten a biscuit out and stack pepperoni and cheese on top. Gather up the edges of the biscuit. Line up the rolls in a greased 9x13 in. pan. Brush with beaten egg. Sprinkle with parmesan, Italian seasoning and garlic powder. Bake at 425°F for 18-20 minutes.
