************ paleo granola ************ 1 c. sliced almonds; 1 c. pumpkin seeds; ½ c. pecans, chopped; ½ c. unsweetened shredded coconut; ½ c. coconut oil; ½ c. raw honey; ¼ c. maple syrup; 1 c. dried cranberries/blueberries/raisins; 1 T cinnamon; 1 tsp salt...preheat oven to 300 degrees. add all ingredients to large microwavable bowl, except fruit. mix well. place on baking sheet (use parchment paper). bake 20-25 min, stirring occasionally. mix in dried fruit once out of oven.

INGREDIENTS: 6 eggs, beaten, I always use organic eggs 1 cup egg whites, I buy them in a container 2 red peppers, chopped 1 green pepper, chopped 1 onion, chopped 1 teaspoon salt 4 tablespoons olive oil 3 garlic cloves, chopped 3-4 green onions, chopped 6 slices Canadian bacon, chopped. DIRECTIONS: Preheat oven to 350F. Spray muffin baking pan with cooking spray and set aside. On a sauce pan over medium heat heat the oil and add the veggies except the garlic. Cook for 3-5 minutes. Add garlic and bacon and cook for a further 2-3 minutes. In a bowl mix regular eggs and egg whites. Divide veggie mixture between the muffin tins. Top veggies with 3-4 tablespoons of the egg mixture. Sprinkle each fritata with the green onions and bake for 15-20 minutes. Let the fritatas cool in the pan for about 5 minutes. Run a small knife along side each fritatta to release it from the pan. Serve warm.

PALEO PANCAKES Original Paleo Pancakes Recipe (1 serving): 1 Egg 1 Banana 1 TBSP Almond Flour (or 1 TBSP of Coconut Flour, but I find the pancakes are drier) This is enough for 1 person, it can make 3 medium size pancakes or 4 small silver dollar size. Coat your pan with coconut oil or grass-fed butter. On medium-high heat, cook for a few minutes and then flip. Depending on the heat and what else you add to these (see below), you may want to lift the side of the pancake up using a spatula and see how done they are. They do cook quickly so keep an eye on them. Also do not flip too early or they could split in the middle. Personalize your Pancakes Blueberries (pictured above): Aim for smaller blueberries because if they are too big, it’s hard to flip the pancakes. Or if you can just toss some on top once the pancakes are done. Coconut Flakes: I also love adding coconut flakes (around 1/2 TBSP) to the batter. Changes the consistency a bit and adds great flavor. Enjoy Life Chocolate Chips: I add these when I’m craving sweets. It’s dessert for breakfast and delicious. Enjoy Life Chocolate Chips are dairy, nut, and soy free. If you are aiming for weight loss, it’s better to have these in the morning, even better if it’s post workout (because of the fruit). I feel my recovery is better eating these post workout, then if I would eat eggs. It may take some time mastering the art of flipping these. They can be tough sometimes and fall apart, so don’t be discouraged. Practice makes perfect!
