Chocolate-Espresso & Caramel Sandwich Cookies - OMIGOSH THESE ARE AMAZING! Like crack. I'm sitting here eating the caramel with a spoon. Can sub Better Better GF flour 1:1 for the regular flour and they turn out great. Do NOT refrigerate caramel, and make DOUBLE the amount. Pour directly on to cooled cookies, it will harden and keep the sandwiches together better.
