Chicken Cordon Bleu Casserole: Ham, Swiss cheese, and boneless chicken breasts -- COMPLETED -- was good, tasted just like ... Chicken Cordon Bleu. Sauce was a bit soupy and the dish was a bit thin. Would put it in a smaller casserole dish and use less milk next time. (Could also put veggies in the sauce for more of a pot pie-like dish.)

I added shredded chicken breast along with using cottage cheese and Greek yogurt mix instead of ricotta cheese( which I don't like). And I did not use an egg cause I didn't have one, but will try it the next time I make it. Will be packing the leftovers for my lunch this week! (I'll use organic or wheat lasagna noodles)

Remove the innards from a Whole Roasting Chicken. Put slices from 1 Onion on bottom of crock pot. Rub spices on bottom of chix, put chix in crockpot, then coat remainder of chix. Balsamic Honey Chicken. Marinade: 1/4 c balsamic vinegar, 1 T Olive oil, 1 clove garlic, minced. Saute in olive oil, remove to platter, deglaze pan w/1 T butter & 2 T B. vinegar, add 3 T honey, simmer to thicken a little. Return chicken to pan to glaze. S & P to taste. Serve w/ pasta or rice.

Ingredients 2 medium (1.5 lbs) chicken breasts $2.99 ¼ cup balsamic vinegar $0.80 1 clove garlic $0.08 2 Tbsp olive oil (divided) $0.24 to taste salt & pepper $0.05 1 Tbsp butter $0.10 2 Tbsp balsamic vinegar $0.40 3 Tbsp honey $0.33 Instructions Slice the chicken breasts on a diagonal into six strips each. Place the strips in a quart sized zip top bag along with ¼ cup of balsamic vinegar, one clove of garlic (minced), 1 Tbsp of olive oil, and a pinch of salt and pepper. Mix the ingredients in the bag and let marinate in the refrigerator for at least 30 minutes. When you’re ready to cook, heat the second tablespoon of olive oil in a large skillet over medium heat. When the oil is hot, cook the strips until browned on both sides (about 2-3 minutes each side). You may have to do two batches. Place the cooked chicken on a clean plate. Turn the heat down on the skillet to medium-low and add the butter and last 2 tablespoons of balsamic vinegar to the skillet. Use a spoon to stir the mixture and dissolve the sticky bits off of the bottom of the skillet. Once the mixture has dissolved together, add the honey, increase the heat, and allow the sauce to simmer until thickened (about five minutes). Once the sauce has thickened, season to taste with salt and pepper (I just used a pinch of each). Add the chicken back to the skillet and toss to coat in the warm balsamic sauce. Serve immediately.

Parmesan Squash Bake potatoes, onions, squash, zucchini, tomatoes...sliced, topped with seasoning and parmesan cheese. 1/2-1 c. grated parmesan 1/4c. extra virgin olive oil, divided 2 cloves garlic, minced sea salt to taste- In a small pan, heat 1 T. oil. Fry the garlic for a minute or so. Slice veggies and Layer them into rows across in the dish. Pour the oil over evenly. Season. Bake 350 for 30 min, uncovered. Pour the parmesan over. Bake another 15-20 minutes til golden brown.

YES!!!--so I made this by plopping in frozen chicken, frozen corn, rinsed can if black beans, block if cream cheese, two cups water/teo cubes chicken broth, and can if Rotel. Turned out awesome!! Chicken fell apart/shredded when I went to stir it. Will probably adapt recipe to make a chicken corn chowder. #crockpotcrazy

Combine cauliflower and garlic in a large bowl. Drizzle with olive oil, lemon juice, salt and pepper. Transfer, in a single layer, to a large rimmed baking sheet.
