Christmas Eggnog Recipe egg nog recipe uses 4 cups milk, 12 eggs. Halved the recipe and used 2 cups milk, 1 cup light cream, 1 cup whipping cream, no cloves or nutmeg. Delicious. Can be made 2 days ahead. Custard should slightly thicken during 3-5 minutes of heating/stirring. Used 1 oz. alcohol to 4 oz. nog. Perfect.

Egg Spinach Quiche Cups:10 ozs. frozen chopped spinach, 3/4 cup egg whts, 3/4 cup shredded fat free cheese, 1/4 cup red bell pepper, chopped 1/4 cup onion, chopped fine hot sauce (optional) Microwave the spinach on high 2 1/2 mins. Drain completely. Line a 12 cup muffin tray w/foil baking cups. Spray the cups w/cooking spray. Combine the egg whts, cheese, mushrooms, spinach & onions in a bowl. Add hot pepper 2 taste. Divide evenly among the cups. Bake at 350, 25mins. Makes 12 muffins 75 cal ea.
