Grilled Caprese Portabella by cheekykitchen: Hearty and healthy and full of that classic summer Caprese flavor. Made with only three ingredients, make it on the grill or in the oven with mini portabellos for appetizers or full sized ones for an entree.
Quinoa, Black Bean & Veg Burger. Olive oil; 1 red onion & 2 cloves garlic, chopped; 1/2 tsp salt; 1x425g can black beans, drained, rinsed; 2 T tomato paste; 1 large egg; 1.5 C cooked quinoa; 2/3 C corn; 1/2 C cilantro; 1 T chilli sauce; dash smoked paprika; 2 tsp ground cumin; 1/2 C rolled oats; 1/4 C oat flour. Heat oil in pan, saute onion, garlic. Place in bowl, add beans & mash. Add other ingredients. Mix well. Form into 6 patties. Refrigerate overnite. Cook on bbq.
