Basic Waffles - this is one of the best recipes I've ever found for waffles. To make them even fluffier, separate the egg yolks and whites and whisk the whites till they're frothy. Add them back into the mixture, and you'll be blown away by how perfect these waffles are.
Pumpkin Pie Baked Oatmeal. Must use certified gluten free oats if you have an allergy (almost all oats are contaminated with wheat). Very good recipe, and makes a single serving. I have also used applesauce in place of the pumpkin..and blueberries, raspberries, banana. Bake a few at one time in ramekins or a muffin and tin and you have a ready-to-go breakfast for the whole week.
