    Southwestern Chopped Salad with Cilantro Dressing | Ingredients 1 cup loosely packed cilantro, stems removed and roughly chopped 1/2 cup plain Greek yogurt 2 Tbsp. fresh lime juice (about 1/2 lime) 1-2 garlic cloves 1/4 cup olive oil 1 1/2 tsp. white vinegar 1/8 tsp. salt Directions Puree all ingredients in a blender or food processor until smooth. Taste and adjust seasonings if necessary.

Southwestern Chopped Salad with Creamy Cilantro-Lime Dressing RECIPE NOTES: Loved this dressing. Paired it with romaine lettuce, sauteed corn, black beans, tomatoes, hard boiled egg, avocado, jack cheese, and baked chicken. It made for the perfect entree salad.

Southwestern Chopped Salad with Cilantro Dressing

Delicious salad! I made this and added mesquite chicken breast and sliced avocado. It calls for 5 green onions, but this gives a real onion kick, so cut back if you don't like such a strong flavor. The dressing is very good. I used 2 cloves garlic and it gave it a real kick of flavor as well. I will definitely make again on a hot summer evening. My family enjoyed as well. I have a definite grade of A.
