Honey Lemon Marmalade, which the author states is worth the work that went into making it. She used regular pectin, but Pomona's pectin might be easier to use when you are using honey rather than sugar.
Mad Scientist Marmalade. This stuff is great, takes a long time, but it's easy, can be infinitely expanded or shrunk. One tip though, save orange shells in the freezer. We saved one batch in the fridge and they got moldy. :-P
