    Crash Hot Potatoes: Boil potatoes with salt until fork-ready. Drizzle EVOO on cooking sheet and smash potatoes. Brush them with EVOO + Balsamic, sprinkle sea salt, pepper, chives. Bake at 450 for ~20 minutes. So good!

I omitted the parsley and it was fine. Highly recommend this recipe! I will make this potato soup from now on instead of my old boring recipe. Don't skimp on the cajun seasoning! Maybe a good alterative to Mashed potatoes... Although i think hubby would go into a state of misery if I replaced my mashed potatoes with these I think he and my 2 year old would live on mashed potatoes!
