Breakfast Casserole 1 Pound of Kielbasa or smoked sausage, diced 1 Cup of Chopped onion 1 Cup of Chopped red bell pepper 1 (20 oz) Package of Refrigerated Southwestern style hash browns (potato o briens) 10 Large eggs 1 Cup of Milk 1 Cup of Shredded Monterrey Jack or sharp cheddar cheese Coat 4 1/2 qt slow cooker with nonstick cooking spray. BBQ Chicken Tacos: I added a clove of garlic, salt, and pepper, and used chicken broth instead of water. We topped ours with corn, coleslaw, cheese, and more BBQ sauce to taste. Also, I drained the juice about 30 mins early and let the unshredded chicken cook in the BBQ sauce for the last 30 mins. I used the juice to cook my broccoli in that I served on the side.
Dad’s Swiss Steak: 2 Pounds Top round steak or london broil...1 Can cream of mushroom soup... 1 Can Stewed tomato (italian herb flavor)... 1 Can Beef broth... Mix all other ingredients together in a small bowl and pour over meat...Cover and cook 6-8 hours on LOW. I serve over white rice and a side of green beans, just like my dad liked it!
