2 1-inch-thick hanger steaks, thick

Produce

1/2 cup Cilantro, fresh leaves
4 Garlic cloves
1 1/2 inches Ginger, fresh
2 Long red or green chiles, fresh
1 Red onion, medium
1/2 cup Thai basil
6 Thai bird chiles, fresh

Condiments

2 tbsp Lime juice, fresh

Baking & Spices

3 tbsp Palm or brown sugar
1 Sea salt and freshly ground black pepper

Beer, Wine & Liquor

2 tbsp Chinese rice wine

    So. so. good. Didn't realize it's not really a salad - more of a collection of peppers, steak, and onion. Cut one jalepeno out, unnecessarily, added a bunch more lime juice when adjusting the dressing, and cooked the onions as I had an old yellow, not a fresh red. Turned out absolutely amazingly. Frankly worth making just for the unbelievable omelet that's easily made with the leftover salad and sauce the next day. (Zakary Pelaccio's Hanger Steak Salad)
