“Better than Fried” Eggplant Parmesan appetizers. So great! I served this with fresh pasta and marinara. --- Easy and rather quick to make. Sometimes I make little eggplant fries for snacks to dip in marinara. Personally, I like to peel the eggplant before cooking them up.
Eggplant, tomato, basil and feta cheese... Salt eggplant, let sit for 30min, pat dry, grill in skillet a few minutes each side. Place in lightly oiled baking sheet, top with evoo/garlic/basil/feta, top with tomato slice, top with more garlic/evoo/basil/feta, and bake at 400F for 15 minutes.
