Crock Pot Tater Tot Casserole-- 1 lb. beef, browned; 1 can rotel; 16 oz frozen tater tots; 1 can cream of chicken soup; 1 small onion; 2 c. shredded cheddar.---- After beef is browned, add onion and rotel. Pour onto bottom of crock pot. Mix in soup and top with tater tops across top. Cook on low 2-3 hours. 30 minutes before serving, top with cheese.

This is a favorite around my house & it's easy. Taco Soup.... Brown ground beef, add a can of black beans, a can of Rotel, a can of pinto beans, a can of corn, a packet of taco seasoning, a packet of ranch & 2 cups of water. Don't drain any of the cans! Simmer 30 minutes. Serve with tortilla chips & garnish with shredded cheese, olives & sour cream.

Cover; chill at least 24 hours before serving. Serve with tortilla chips. Serves 10-12. (Can serve warm or cold)
