Chickpea & Feta Salad 1 med onion, diced 3 cloves garlic 1 1/2 tbs olive oil Pinch red chili flakes 2 -14oz cans chickpeas 4 scallions, green part, chopped 1 c chopped parsley Juice 1 lemon 5 oz feta, crumbled Heat 1 Tbs oil & cook red onion till lightly golden. Add garlic & chili, cook 1-2 mins. Set aside to cool. Drain chickpeas, rinse & put in bowl. Add feta, scallions, parsley & lemon juice, season w/salt & pepper. Add cooled onion, garlic mix & remaining oil & mix well.

Chickpea, Feta and Parsley Salad 1 medium onion, diced 3 cloves garlic 1 1/2 tbs olive oil Pinch red chili flakes 2 400g (14oz) tins of chickpeas 4 spring onions (scallions), green part only, chopped 1 cup chopped parsley Juice of one lemon 150g (5 ounces) feta Salt and pepper Heat 1 tablespoon of olive oil and cook the red onion till lightly golden. Add garlic and chili and cook till the garlic is fragrant. Set aside to cool. Drain the chickpeas and place in the salad bowl. Add crumbled feta, spring onion, parsley and lemon juice. Add cooled onion and garlic mix, oil and mix well.

Preheat oven to 400 degrees. 2. Bake your sweet potato until tender. 3. Remove potato skin, add to blender along with the broth and non-dairy milk. Blend on low until smooth. Taste a drop to see that it is slightly bland at this point. Add the salt and spices to taste. I added the zest last and folded it into the poured soup. 4. Serve with garnish or avocado and crushed chips over top.
