I've written this recipe to be cooked on the barbecue, because the flavour will be amazing, but it also works really well when roasted in the oven at 200ºC/400ºF/gas 6. If you cook it in the oven, turn the pieces of rabbit several times to ensure even colour and cooking. If you cook it on the barbecue, you'll need 5 wooden or metal skewers (soak wooden ones before you use them). Oven at 300*, cook for 30-40min. Toss thickly sliced zucchini in olive oil. In another bowl, combine parmesan cheese, bread crumbs, and a few turns of pepper. Coat zucchini, bake until browned & crisp. Serve hot! For salt and vinegar, soak slices in vinegar for 1hr and sprinkle with salt. Chipotle powder or curry powder for other flavors.
