Zucchini, Black Bean and Rice Skillet

1 can (15 oz each) rosaritaa premium whole black beans
1/2 cup Green bell pepper
1 1/2 cups Zucchini

Pasta & Grains

1 cup White rice, instant

Oils & Vinegars

1 tbsp Wessona canola oil, Pure


1/2 cup Cheddar and monterey jack cheese blend


3/4 cup Water


1 can (14.5 oz each) hunt'sâ® fire roasted diced tomatoes with garlic, undrained

    Healthy Zucchini, Black Bean, and Brown Rice Skillet. Heat 1 tbsp oil in large skillet over med. heat. Add 1 1/2 c. sliced/quartered zucchini and 1/2 cup diced green bell pepper; cook 5 min., stirring occasionally. Add can black beans,undrained fire roasted diced tomatoes w/ garlic & water. Increase heat and bring to a boil. Add 1 c. instant white rice;stir well. Cover; remove from heat and let stand 7 minutes or until liquid is absorbed. Sprinkle w/cheese.(Can also add ground meat)
