If you are eating low carb, you know it can be difficult to find grab 'n go food. Well here it is, these take little preparation, just make a batch at the beginning of the week and you will have 20-30 no-carb egg muffins that will last all week for breakfast and even some snacks. You can make them ahead and then reheat them when ready to eat.

Great grab-n-go low carb breakfastEgg Muffins (Makes 12 muffins, recipe created by Kalyn with inspiration from The South Beach Diet book. 15 eggs (for silicone muffin pans, use 12 eggs for metal muffin tins or individual silicone cups. You can use less egg yolks and more egg white if you prefer.) 1-2 tsp. Spike Seasoning 1-2 cups grated low fat cheese (I like sharp cheddar or a blend of cheddar/Jack cheese, use less cheese if using meat) Optional, but highly recommended, 3 green onions diced small. Optional: chopped veggies such as blanched broccoli, red pepper, zucchini, mushrooms, etc. (Using veggies will reduce the fat content) Optional: diced Canadian bacon, lean ham, or crumbled cooked turkey sausage Preheat oven to 375 F. Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray. In the bottom of the muffin cups layer diced meat, if using, vegetables, if using, cheese and green onions. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. Break eggs into large measuring bowl with pour spout, add Spike, and beat well. (I used to add a bit of half and half or milk, but lately I like the way they turn out without it.) Pour egg into each muffin cup until it is 3/4 full. I like to stir slightly with a fork. Bake 25-35 minutes until muffins have risen and are slightly browned and set. Muffins will keep at least a week in the refrigerator without freezing. Egg muffins can be frozen and reheated. For best results, thaw in refrigerator before reheating. Microwave on high about 2 minutes to reheat.

As you can see, we tried it and it tastes wonderful 7-cups unpeeled pickling cucumbers sliced thin (about 7 large dills) 1-cup sliced onions 1-cup sliced green peppers 1-tbsp salt 1-cup white vinegar 2-cups sugar 1-tsp celery seed 1-tsp mustard seed We used red pepper Mix cucumbers, onions, peppers and salt; set a side Put vinegar, sugar, celery seed and mustard seed in a pot and bring to a boil Remove from heat and let cool for one hour Pour mixture over cucumbers Put in jars and store in refrigerator Will keep up to 2 months Makes 2 quart jars MORE CANNING RECIPES

Salsa roja (roasted red salsa) 16 full size tomatoes, or nearly a produce bag full of roma tomatoes (we used roma) 2-3 yellow onions 20-25 Serrano peppers (remove caps) Note: this many peppers makes it hot. Feel free to reduce # of peppers, or scrape the seeds out of them 8-10 cloves of garlic 1-2 Tbsp salt 1-2 bunches cilantro 1. Halve the tomatoes and onions and lay cut-side up on a cookie sheet along with the peppers and garlic 2. Roast at 375 till the onions look nice and translucent (see bottom left of the next picture), tomatoes look soft, and peppers are getting a nice char on them 3. Let it all cool a bit, then run through the food processor with salt and cilantro (we had to do this in two batches) 4. Stir it all together and eat with abandon. Trust me.

roasted cauliflower - Roasted cauliflower, Manchurian-style – feeds 2-4, depending on greed If you scoff at the idea of eating half a cauliflower each in one fell swoop as we both did, then this will make you re-think. Why Manchurian? No idea. Bittman uses tomato sauce (ketchup) which would undoubtedly convince every child in the land to gobble up their veg. Substitute 1 cup, preservative-free, for the homemade tomato sauce and the recipe is that much quicker. 1 compact, perfect head of cauliflower Olive oil Sea salt and pepper 1 onion, finely chopped 1 x 400g (15oz) tin of chopped tomatoes A good glug of red wine vinegar A good glug of balsamic vinegar 2 teaspoons of sugar 3 fat cloves of garlic, finely chopped Good pinch (or more) of chilli powder Preheat the oven to 200 C (400 F). Core, trim and break the cauliflower into florets of even-ish size. Arrange in a single layer in a baking dish. Toss with 2 tablespoons of oil, 1 teaspoon of salt and loads of pepper and roast, turning twice, for 30 minutes. Fry the onion in a little oil until soft and beginning to colour. Add the tomatoes, juice and all, followed by the vinegars, sugar and a little salt. Bring to a boil, then simmer briskly for 10-15 minutes, until reduced to about a cup. Puree until smooth. 5 minutes before the cauliflower is ready, heat a splash of oil in a large frying pan over a medium heat. Add the garlic, and cook for a minute or two until fragrant, but not coloured. Pour in the tomato sauce (either the one above, or use 1 cup of ketchup) and cook, stirring often, for a few minutes, until the sauce bubbles and thickens – it must be rich and sticky. Add the chilli powder to taste and, when ready, tip the cauliflower florets into the pan. Toss over and over, making sure they are well coated in the sauce and serve, hot.

These chocolate chip meringue cookies are a wonderful alternative to standard chocolate chip cookies. They are chocolatye, light and airy and melt in your mouth. A great chocolate fix! If you make them the night before, they are chewy the next day, and even chewier the next, which is how I like them. These are also great if you are gluten free diet. Chocolate Chip Clouds This recipe was adapted from Hershey’s Kitchens Gina’s Weight Watcher Recipes Servings: 30 • Serving Size: 1 cookie • Old Points: 1 pt • Points+: 1 pt Calories: 53.7 • Fat: 2.2 g • Carb: 8.4 g • Fiber: 1.7 g • Protein: 1.1 g ■9 tbsp egg whites (room temperature) ■1/8 tsp cream of tartar ■1/2 cup sugar ■1 tsp vanilla extract ■2 tbsp unsweetened cocoa powder ■1 cup chocolate chips Heat oven to 300°F. Cover cookie sheet with silpat or nonstick silicone pad. Using a mixer, beat the egg whites and cream of tartar together in large bowl at high speed until soft peaks form. Gradually add sugar a little at a time, then vanilla, beating well after each addition until you get stiff peaks, the sugar is dissolved and the mixture is glossy. Sift cocoa onto egg white mixture; gently fold until combined. Fold in chocolate chips. Drop mixture by tablespoons onto cookie sheet. Makes 30 cookies. Bake 35 to 45 minutes or just until dry. Cool slightly; remove from cookie sheet. Cool completely on wire rack. Store covered, at room temperature.

4 cups small cauliflower florets 1/4 tsp ground nutmeg 3 oz Velveeta 2%, cut into 1/2 inch cubes 3/4 cup 2% shredded sharp Cheddar cheese 1 cup corn flakes 1/4 cup sliced almonds Directions: 1. Preheat oven to 375° F. 2. Microwave cauliflower in 8 to 9 inch square microwaveable ovenproof dish on HIGH 3 to 4 minutes or until crisp tender. 3. Weight watchers cabbage rolls.... 5 points plus if made into 10 rolls/2 rolls per serving. Used brown rice and ground turkey. 1/4 cup to each leaf and cooked 8 hours on low. Used 29 oz of diced tomatoes and also a 8 oz can of tomato sauce. Didn't use the water or the oil.
